skinny bitch in the kitch

Regardless of the kind of 'cute/offensive" title of this book, I thought I'd be adventureous and make good use of this cook book I bought a few months back. I made the "Chocolate Chip Cookies" and they are TO DIE FOR. Suz was hanging around when I made them and I'm pretty sure we were both a little nervous. The recipie called for "Coconut Oil" but Trader Joe's didn't have it (Whole Foods does for $10) so I just used Vegetable Oil...which was ok. It worked alright, but I'm sure if I used the ingrediance the recipie called for, they would have not been so crumbly.

Regardless of the crumbles, they are SO GOOD. I couldn't believe it, and I Suz died when she tried them. Here is the recipe as follows in the book.


2 1/2 Cups whole wheat pastry flour (whole foods has it for 69c a lb)
1/2 tbls baking soda
1 tsp fine sea salt (i just used my pepper grinder with corse sea salt)
1 1/2 cups evaporated cane sugar (2.50 at TJ or WF for a huge bag)
1 1/4 cup refined coconut oil (I used vegetable oil...it was ALOT of oil)
1/4 cup ice water
1 tbls molasses
1/2 tbls vanilla extract
1 package (vegan) chocolate chips
1 cup chopped walnuts (optional)

Preheat oven to 375 and line baking sheets with parchment.
In a medium bowl, sift together the flour, baking soda, and salt; set aside.
In a bowl w/ a standing mixer/hand mixer, combine sugar and coconut oil, mixing on medium-high speed until creamy, about 3 mins. Add the water, molasses, and vanilla, mixing until well combined. With the mixer on low speed, add the flour mixture in 3-4 additions, mixing each addition until almost fully incorporated. Add in the chocolate chips and nuts, if using, mixing until just combined.
Arrange 2-tbls-sized balls of cookie dough 2 inches apart on pre-pared baking sheets. Bake for 13 to 15 mins, until the edges are slightly browned and the centers are set. Thoroughly cool on a cooling rack.
makes about 48 cookies
